Sourdough Discard Cheese Crackers
When I’ve been feeding my sourdough starter in preparation for break baking, I always have a lot of discard.
This is my go-to recipe to use it up for no waste!
While there are so many sourdough discard recipes I love and share, these cheese crackers are my kids’ favorite. I can make a pan and they will be gone before I even put them into a bowl.

I especially love that:
- They are homemade in under 30 minutes.
- I know exactly what is going into them.
- They have no artificial ingredients or preservatives (when shredding my own cheese!)
Equipment
- Mixing bowl
- Spatula (Such a pretty set!)
- Parchment paper
- Baking sheet (These are my favorite!)
- Pizza cutter or sharp knife
Ingredients for Sourdough Discard Crackers
- 1 Cup Sourdough discard
- 1.5 Cups Sharp cheddar cheese, finely shredded
- 2 Tbs. Melted Butter
- 1/2 tsp. Salt (more to taste)
- Optional: garlic powder, paprika, or cayenne
Instructions

- Preheat the oven to 350.
- Mix the dough by combining sourdough discard, cheddar cheese, and melted butter.
- Spread the dough thinly on the parchment lined pan. This may take a little effort if your sourdough discard is a thicker consistency. Just spread the dough ultra thin to all four corners of the pan.
- Sprinkle garlic powder or other spices evenly across the top of the dough.
- Bake for 10 minutes, then remove from the oven and cut into crackers of any size. Top with the salt.
- Bake 20-25 minutes more until crisp.
- Cool and store in an airtight container.
Sourdough Discard Cheese Crackers
Crispy homemade cheese crackers made with sourdough discard and sharp cheddar for an easy savory snack.
Ingredients
- 1 Cup Sourdough Discard
- 1.5 Cup Shredded Cheddar Cheese
- 2 Tbs. Melted Butter
- 1/2 Tsp. Salt , Or to Taste
- 1/2 Tsp. Garlic Powder , If Desired
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Line a 9x13 baking pan with parchment paper.
- Mix together 1 cup of sourdough discard, 1.5 cups of shredded cheddar cheese and 2 Tbs. of melted butter in a medium bowl.
- Spread the dough very thin on lined pan. The thinner you spread the batter, the crunchier the crackers will be.
- Top with 1/2 tsp. of garlic powder if desired.
- Bake for 10 minutes.
- Remove the pan from the oven and use a pizza cutter to cut crackers into one inch squares. Top with 1/2 tsp. of salt (or to taste).
- Place the pan back in the oven and back another 20-25 minutes, or until crispy.
- Let cool 20 minutes, then break up the crackers.
Notes
You can use a variety of spices as desired, including cayenne pepper if you want a kick! Depending on your sourdough discard hydration, your dough may be thinner or thicker. Thicker dough may take longer to bake. Adjust cooking times as needed.
For flavor twist, sub half of the cheese for Colby Jack.
