What is Quiche?
If you’ve never had quiche before, you may wonder, what is quiche? Quiche has stood the test of time, but isn’t overly talked about as a dinner recipe.
Typically, quiche is referred to as a breakfast or brunch recipe, but I LOVE it for dinner. The flavor is too good to keep for breakfast alone.
Quiche is a french tart that has a predominately custard filling. You can make many different kinds of quiches with a variety of meats and vegetables added to the custard.
For this quiche, we are going for a simple taco flavor!

Taco Quiche Recipe

This is a very simple and quick recipe. You can choose to make your own crust with your favorite homemade crust recipe.
Or, you can use refrigerated or frozen pie dough.
Do I bake quiche pie crust first?
One of the main mistakes for baking a killer quiche is not baking the pie crust first.
Some people place uncooked pie dough into a dish, add the filling, and bake it all at once. This will create a soggy pie crust that isn’t properly cooked.
Instead, bake that pie dough first!
You can choose to use rice or pie weights to keep your dough from bubbling as it bakes, or bake it as is. I like to line my pie dough with foil, add some rice, and then bake so that it cooks evenly.
Taco Quiche Ingredients
First, gather your taco quiche ingredients. This is the perfect recipe for leftover taco meat from Taco Tuesday!
Remember, quiche is very forgiving. As long as you have the main ingredients for the custard, you can add in various additions for flavor.
- 1 pie crust
- 1 cup heavy cream
- 3 eggs
- 1 tsp salt
- 3/4 shredded cheddar cheese
- 3/4 cup of ground hamburger meat, browned and flavored with taco seasoning
- 1/2 tsp pepper
- Additional 1/2 cup shredded cheddar cheese
How to Make Taco Quiche
Begin by preheating the oven to 450 degrees Fahrenheit.
Place your pie dough into a 9 inch pie plate. Bake, either weighted or not, for 8 minutes with foil on top. Then, remove the foil and bake for 4-5 more minutes or until browned.
Next, lower the heat of your oven to 375 degrees.
Combine heavy cream, whipped eggs, salt, 3/4 cup cheddar cheese, taco meat, and pepper in a medium bowl. Stir well.
Place custard filling into baked pie shell.
Add 1/2 cup of shredded cheddar cheese on top.
Bake at 375 for 45-55 min or until knife comes out clean.
Check your taco quiche after 25 min. If the edges of the pie crust are over-browning, cover with foil.
Remove when baked through and let cool for 10 minutes.
Here are some suggestions for toppings!
- Green onion
- Salsa
- Sour cream
Serve warm or cold and refrigerate leftovers.
I like to serve quiche with a nice side salad. You could also offer chips and salsa or guacamole.
