Pulled Pork Soup with Hearty Vegetables and Gnocchi
Pulled pork soup with hearty vegetables and gnocchi is the perfect complete-meal soup combo. This soup was born out of an abundance of left over pulled pork and the need to use up some fresh veggies.
It has quickly become one of my favorite “what’s left in my fridge” concoctions. I hope it will become a part of your regular dinner rotation as well!

Pulled Pork Soup with Hearty Vegetables and Gnocchi
I love the versatility of this pulled pork soup.
You can cook it in a crock pot, on the stovetop, or in an Instant Pot.
You can also omit just about any ingredient your family isn’t a fan of. Or, add in a favorite veggie as well!
I also make it as a broth soup or with a creamy addition for a more comfort-food feel.

Pulled Pork Soup Ingredients
- 2 Tbs. butter (or olive oil if preferred)
- 5 medium size carrots, sliced
- 2 small onions or equivalant, diced
- 3/4 c. celery, sliced
- 3/4 c. fresh green beans, trimmed and cut
- 2 cloves garlic, minced
- 3 sprigs fresh thyme
- 2 sprigs fresh oregano
- 3 sprigs fresh parsley
- 1 1/2 tsp. salt
- 3/4 tsp. black pepper
- 3/4 c. frozen peas
- 3/4 c. frozen corn
- 5-6 c. chicken broth (vegetable broth works as well)
- 3 c. cooked pulled pork (or cooked shredded chicken)
- 6 oz. potato gnocchi
- 1/4 c. cherry tomatoes (optional)
- 1/2 c. cream (optional)
Recipe Instructions
For this recipe, we will be using the crock pot.
Begin by sautéing the carrots, onions, celery, and green beans in butter. Sauté for 5-7 minutes, or until softened slightly. This step helps bring out the flavor.
Add your minced garlic to the pan and sauté 2-3 more minutes.
Next, add your sautéed ingredients to the crock pot. Then, add all remaining ingredients except the gnocchi and cream (if using) and stir to combine.
Cook on low for 7-8 hours or high for 3-4 hours.
10 minutes before you are ready to eat, add the gnocchi and stir. If you like a little pop of flavor, add cherry tomatoes at this time as well. Re-cover the crock pot and let cook another 10 minutes.
If you want a creamy soup, add 1/2 c. cream right before serving and stir well. Otherwise, enjoy as a broth soup!
Serve with your favorite salad and crusty bread. It’s the perfect dipping soup!

Alternate Cooking Instructions
If you prefer to cook on the stovetop or Instant Pot, the recipe is just as simple!
Stove Top Instructions
Sauté your vegetables in the bottom of a dutch oven or stock pot for 5-7 minutes. Then add your garlic and cook another 2 minutes.
Next, add remaining ingredients except the gnocchi and cream.
Bring to a low boil, then reduce heat to low, cover, and cook for 1 hour. Stir every 20 minutes or so.
Add the gnocchi and cook another 5 minutes, stirring occasionally.
Add cream before serving if desired.
Instant Pot Instructions
Set your Instant Pot to sauté mode and sauté your vegetables in the bottom of your Instant Pot for 5-7 minutes.
Next, add your garlic and cook another 2 minutes.
Then, add remaining ingredients except the gnocchi and cream.
Set your Instant Pot to Normal Pressure Cook, seal the unit so it is not venting, and set the time to 5 minutes.
After the 5 minutes has passed and your Instant Pot has fully vented, remove the lid, add the gnocchi and stir. Seal the lid again for another 5 minutes without cooking. At this point, the residual heat from the soup is going to cook your gnocchi.
Add cream before serving if desired.
