This recipe calls for an air fryer method of cooking. However, you can also roast your beets and radishes in a traditional oven. Please see the section on alternative cooking methods for details.

Ingredients to Gather

  • 3/4 lb beets (3-4 large beets)
  • 1/2 lb radishes (4-5 large radishes)
  • 1 Tbs. olive oil
  • 1/2 tsp. Himalayan Salt (or fine sea salt)
  • 1/4 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 2 sprigs fresh thyme
  • zest of 1/2 lemon
  • 1/4 c. goat cheese crumble
  • 1 tsp. honey (drizzled for garnish)
  • 1 Tbs. fresh parsley (for garnish)

How to Prepare Air Fryer Beets and Radishes

Begin by slicing your beets and radishes into wedges.

I like to cut the tops off both vegetables and peel the beets first.

(You do not have to peel the beets, however your final product will have a different skin texture if you do not. If you choose to leave the skin on, simply wash and dry it first.)

Cut up beets and radishes on a counter.

Next, place the vegetables flat side down and cut from the top down into fourths. If you have large vegetables, cut them again until you have 8 pieces. The main goal is to ensure that your wedges are of equal size so they all cook at the same rate.

Combine salt, pepper, garlic powder, fresh thyme stripped off the stem, and zest of lemon in a bowl.

Next, add the beets and radishes and toss to coat. Add in the olive oil and combine well.

Preheat your air fryer to 380 degrees.

I use a Ninja Foodie, which does much more than just air fry. It is amazing as it also bakes, grills, roasts, broils and dehydrates in one machine. It was my life saver during our kitchen remodel!

If you are also using a Ninja Foodie, set your timer to 25 minutes.

Place your coated radishes and beets into your air fryer basket. Make sure to spread out the wedges so they aren’t piled on top of each other. This allows the air to circulate so you get that crisp air fried vegetable skin.

If you have a smaller basket, you may need to cook in shifts.

Air fry for 10 minutes, then shake the basket so one side doesn’t get too crispy. Air fry another 10 minutes or until cooked to fork tender. It may take up to 25 minutes total.

Radishes tend to cook faster than beets. So if your radishes are on the small side compared to the beets, I’d recommend adding the beets only first and cook for 5 minutes. Then add in your radishes for the remaining time.

Once all wedges are fork tender, place in a bowl and top with the goat cheese, chopped parsley and drizzle of honey.

Serve warm and enjoy!

Alternative Cooking Methods

One of the best benefits of air frying beets and radishes is that it is much faster than traditional methods.

Beets inherently take a long time to cook through. Air frying is one of the fastest methods.

However, if you do not have an air fryer, you can make oven roasted beets and radishes using this same recipe and get delicious flavor.

Follow the recipe as directed. Instead of using an air fryer, preheat your oven to 400 degrees and roast your veggies in a single layer on a sheet pan lined with parchment.

I’d recommend adding the beets alone first and roast for 10 minutes. Then, add your radishes and roast another 30-35 minutes.

Roast until fork tender, stirring at the 20 minute and 30 minute mark (from starting the beets).

Are Beets and Radishes Good for You?

These root vegetables are very good for you! Beets and radishes both contain lycopene, a powerful antioxidant.

Do Beets Taste Like Radishes?

These two root vegetables are less common than others, like carrots. Because of that, they can sometimes get a bad rap on the flavor meter.

However, don’t dismiss them simply because they are an unknown! Beets and radishes are often substituted for each other in recipes, however they have distinct flavors.

Beets are mild, earthy and slightly sweet, especially when roasted. Whereas radishes have a much sharper and peppery flavor, which is more subdued with roasting.

What to Serve With Beets and Radishes

This recipe is an amazing side dish to serve with steak, pork and chicken.

For vegetarians, let the dish cool slightly and then serve over a bed of quinoa or lettuce for a full meal. Top with a simple vinaigrette if desired.
