  • 1 Cucumber
  • 8 oz. Vegan Chive Cream Cheese (softened)
  • ¼ Cup Vegan Mayonnaise
  • ¼ Tsp. Salt
  • ½ Tsp. Dill Weed
  • ¼ Tsp. Crushed Red Pepper Flakes
  • 12 Slices of Sourdough Sandwich Bread

Directions

Step 1. In a small bowl, mix together the vegan chive cream cheese and the vegan mayonnaise until well combined.

Step 2. Mix in the salt, dill weed, and crushed red pepper flakes, then set aside. 

Step 3. Roll out 12 slices of sourdough sandwich bread (or bread of your choice). Using a rolling pin, flatten one piece at a time.

Step 4. Trim the crust edges off all the pieces of bread to create clean rectangles. Set aside.

Step 5. Peel your cucumber and slice it into small thin circles (or skip the peeling and leave the skins on if you prefer!)

Step 6. Assemble the sandwiches.

Start by taking one flattened slice of bread. Using a spatula or knife, spread a layer of the mayo/cream cheese mixture onto it, followed by a layer of cucumbers.

Take another flattened slice of bread and place it on top. Follow with another layer of mayo/cream cheese mixture and more cucumbers, then top with another slice of bread. 

Step 7. Press down on the sandwich and then slice it into quarters. Place on a platter and serve!

Other Ways to Enjoy Vegan Cucumber Sandwiches

While cucumber is the star of these sandwiches, you can also add other vegan-friendly fillings to enhance the taste and texture.

  • 1 Cucumber
